Recipe: Vegan Buckwheat Pancakes

With Pancake Tuesday just around the corner, we thought we'd whip up a batch of our favourite Vegan Buckwheat Pancakes. They are so delicious, simple to make, and take no time at all! 

Ingredients 

  • 1 cup of buckwheat flour 
  • 1 cup of almond milk 
  • 1 tablespoon of maple syrup or any other natural sweetener of your choice 
  • 1 egg substitute- mix 1 tablespoon of chia seeds with 3 tablespoons of water
  • A pinch of salt 
  • A dash of coconut oil for frying 

Directions 

  1. Start off by preparing your chia egg substitute by mixing 1 tablespoon of chia seeds with 3 tablespoons of water. Put this mixture to one side, leaving the chia seeds to soak up the water and congeal to form a sticky gel
  2. Mix all of the ingredients together including your chia egg
  3. Heat a non-stick pan on a medium to high heat 
  4. Scoop a small ladle of your batter into the pan
  5. Your pancakes are ready to be flipped when you notice lots of bubbles popping on the surface of your batter  
  6. Cook the other side of your pancake until golden brown
  7. Serve with whatever you fancy. We served ours with strawberries, maple syrup & raw cacao nibs! 
  8. Enjoy!
