Recipe: Roasted Butternut Squash and Pesto Courgetti

Sometimes there's nothing more comforting than tucking into a big bowl of pasta. However, this isn't always the best option for those of us in pursuit of a healthier lifestyle and diet. The health industry in London is thriving at the moment and if we've learnt anything from the likes of Hemsley & Hemsley, Honestly Healthy, and Deliciously Ella, it's that, with a little creativity, we can whip up a scrumptiously clean substitute for pretty much anything! Courgetti has become our favourite spaghetti substitute, we just can't get enough of it, it's so easy and fun to make and the possibilities are endless! We threw together this Roasted Butternut Squash and Pesto Courgetti over the weekend and it was a hit so we had to share it with our fellow health junkies! This lovely meal serves two. 

Ingredients 

  • 1 red onion 
  • 1 clove of garlic 
  • 1 thumb-sized piece of fresh ginger 
  • 2 teaspoons of coconut oil 
  • 2 courgettes 
  • 2 cups of butternut squash chopped into cubes 
  • 4 medium-sized chestnut mushrooms, sliced 
  • 3 tablespoons of basil pesto 
  • A sprinkle of sunflower seeds and fresh parsley for garnishing

Directions 

  1. Preheat the oven to 180ºC
  2. Place your chopped butternut squash on a tray and drizzle with 1 teaspoon of coconut oil. Roast the butternut in the oven for about 25 minutes, or until soft, and set aside
  3. Using a Spiralizer, transform your two courgettes into courgetti 
  4. Heat a frying pan or wok on a medium heat, adding the other teaspoon of coconut oil to your pan
  5. Finely chop the onion, garlic and ginger, adding them to the hot coconut oil, gently frying everything until the onions are soft 
  6. Add in your sliced chestnut mushrooms and lightly sauté them until they are soft 
  7. Add in the courgetti and lightly sauté for about 6 minutes
  8. Finally add in your roasted butternut squash and pesto, giving everything a good mix 
  9. Serve with sunflower seeds and parsley :)
