Recipe: Roasted Beetroot Hummus

Hummus is amazing, it's packed with goodness, high in protein, and it's super versatile. You can enjoy it spread over some lovely warm toast, as a salad dressing, as a dip for raw veggies or simply as a side to whatever you're munching on. We like to make big batches over the weekend, keep it in Tupperware, and scoop out a spoonful to accompany our meals throughout the week. There's also so much scope for variety when it comes to hummus, from roasted red pepper to spinach, the options are limitless, but this beetroot number is by far our fave! It's also perfect to bring along to all of the chilled Summer BBQs we have to look forward to! :) 

Ingredients 

  • 400g of cooked chickpeas 
  • 4 tablespoons of good quality organic olive oil 
  • 2 teaspoons of tahini 
  • Freshly squeezed juice from 1.5 lemons 
  • 1 clove of garlic 
  • 5-8 tablespoons of water depending on how creamy you like your hummus 
  • 1 raw beetroot bulb
  • Pink himalayan salt to taste

Directions 

  1. Cube your beetroot and roast it in some coconut oil at 200ºC for about 25 minutes. 
  2. Add all of the ingredients to your blender, including the beetroot and blitz until smooth and creamy. 
  3. Enjoy! :)
