Team Blondies or Team Brownies?... Just Make Both!

If you can't decide between blondies or brownies (and who can blame you?), here's a great hack to make both at the same time - only one baking tin needed!

 

INGREDIENTS (Makes 9)

225g vegan butter, melted
340g brown sugar
2 flax eggs (1tbsp ground flaxseed + 3 tbsp water per egg, left to set for 15 mins)
1 tablespoon vanilla extract
1 teaspoon salt

For Blondie Half:

130g vegan white chocolate chips
140g self-raising flour

For Brownie Half:

100g self-raising flour
40g cocoa powder
130g vegan dark chocolate, melted
4 Butter Cups of choice (I used Salted Caramel), chopped into chunks

 

METHOD

Preheat your oven to 180C

Grease and line an 8x8inch brownie tin with baking paper, then create a divider using foil - fold it into a long 'T' shape and press into the centre of the tin so it splits it into halves

Whisk together the melted butter and sugar with the vanilla and flax eggs and a pinch of salt, then split this wet mixture into two large bowls

To one half, add 140g flour and stir through the white chocolate chips (this is your Blondie half)

To the other half, add the melted dark chocolate and stir to combine well - then add 100g flour, 40g cocoa powder, and stir through the chopped Butter Cups (this is your Brownie half)

Pour the batters into the two sides of the pan

Bake for 30 minutes and then check each side with a toothpick to see if it comes out clean. If not, bake for 15 more minutes (you may need to cover with foil depending on your oven to prevent burning)

Remove from the oven and allow to cool completely in the tin

Cut into squares and store at room temperature in an airtight container- enjoy for up to 3 days
