Valentine's Day can feel overwhelming but we're all about keeping things simple. Always spend time with the people you love, tell them that you love them...and on days like these a small homemade gesture goes a long way. These pink Vegan Chocolate Coconut Cups are the perfect Valentines treat for a loved one.
1 x 80g bar of vegan chocolate
1/4 cup ground oats
1/4 cup desiccated coconut
1 x TBS maple syrup
1 x tsp melted coconut oil
1/2 tsp beetroot powder (optional for colour, pink pitaya powder also works well)
Generous dash of salt
In a bain-marie slowly melt the chocolate. Whilst it's melting, grab a bowl and mix together the rest of the ingredients. Pour a reasonably thick layer of melted chocolate into cupcake moulds and pop them into the fridge for about 10-15 minutes until the chocolate is solid. Scoop out a generous spoonful of the filling mixture and roll it into a ball slightly flattening it at the end into a cookie shape and pop it on top of the solid chocolate base layer, cover it with more chocolate and decorate with freeze dried raspberries and sea salt flakes. Pop them back into the fridge to solidify.
