Squash Curry - Vegan, Gluten Free, Dairy Free, and Refined Sugar Free

Curries are a great way to bring intense flavours out of everyday ingredients, and they can be personalised and changed time and time again… so there’s no excuse to get tired of them! Our Immunity blend goes brilliantly with curries and other spicy dishes, as the turmeric, ginger, and cardamom create a rich base that you can use to build any spicy dish (no matter whether you’ve got a delicate palette or a fiery one!)

Ingredients

  • ½ butternut squash
  • 1 small red onion
  • 3 cloves garlic
  • 2 tbsp LoveRaw’s ‘Immunity Food Booster’ powder
  • 1 cup spinach
  • ½ tin of light coconut milk (200g)
  • 1 tbsp tomato puree
  • Squeeze of lemon
  • ¼ cup of peas
  • 1 tsp coconut oil for frying
  • Pinch salt & pepper

Method

  • Chop the butternut squash into small chunks around 2-3cm and boil for 15-20 minutes until soft
  • In a small pan gently fry off the chopped red onion in coconut oil with the Immunity powder. This helps the onion really absorb the aromatic flavours of our Immunity blend!
  • Add the minced garlic and cook for another 1 minute
  • Add the coconut milk and stir together
  • Add the tomato puree and lemon juice and mix together
  • Drain the water from the squash and mix together. Allow to infuse for a further 15 minutes
  • Five minutes before serving add the peas and spinach and stir until wilted
  • Serve up with a little Coconut yogurt and freshly chopped herbs (we recommend coriander!)
