Chocolate Banana Muffins

Super moist, light and filled with gooey, melted M:LK CHOC chunks... baking these muffins might have to become a weekly thing!


1 x flax egg (1 x TBS flax meal + 2.5 TBS water) 

2 x overripe bananas 

1/4 cup coconut sugar 

2 x TBS coconut oil 

1 x tsp baking soda 

1 x tsp apple cider vinegar 

1/4 tsp salt 

3/4 cup spelt flour 

1/4 cup whole oats 

1 x LoveRaw M:LK CHOC Bar chopped into chunks



Prepare the flax egg by mixing the ground flax seeds with water and allow to sit for 5 minutes. Then add in the two bananas and mash. Add the sugar, baking soda, salt, apple cider vinegar and coconut oil, whisking everything together for a minute or so. Then add in the flour and oats and finally your M:LK CHOC chunks. Pour the batter into muffin cases or moulds and bake at 190°C for about 15 minutes until golden. Check if they're cooked by inserting a toothpick, and if it comes out clean, they're good to go! Makes 5 muffins.
