Chocolate And Hazelnut Loaf By @freyacox

As Easter approaches, we want to share some Easter bake inspiration with an indulgent recipe. Get ready to enjoy a Nutty Choc Ball themed fresh loaf - could it get any better?!

Ingredients

For the loaf: 

  • 225ml plant milk
  • 1 tbsp apple cider vinegar/lemon juice
  • 200g plain flour
  • 35g cocoa powder
  • 110g caster sugar (white sugar)
  • 100g soft light brown sugar 
  • 1 tsp bicarbonate of soda
  • 1tablespoon of coffee powder
  • 1/2tsp salt
  • 90ml vegetable oil
  • 100g chopped roasted hazelnuts 

For the topping: 

Instructions

  1. Preheat the oven to 180c fan, line a 1lb loaf tin with parchment paper 
  2. Add the milk and vinegar/lemon juice to a mixing bowl. Once curdled add in the rest of the ingredients (not including the hazelnuts) and whisk with a balloon whisk until smooth
  3. Fold in the hazelnuts, pour the batter into your tin. Bake for 50-60 minutes or until a skewer comes out clean. Leave to cool on a wire rack until completely cool, removing from the tin when cool enough to do so 
Once cool, top generously with the hazelnut spread and load up with lots of Nutty Choc Balls! Enjoy!
