Pistachio Rich Soft Cookies (with white choc & premium pistachio drizzle)

Soft, chewy, and unapologetically nutty. These oat-based cookies are loaded with dairy-free white chocolate and get a massive flavor upgrade from our elite LoveRaw Pistachio Spread. They’re sweet, ridiculously soft, and built for ultimate snacking without a drop of dairy in sight.

You’ll need (makes 8-10 cookies)

  • 120g coconut oil (softened)

  • 100g caster sugar (or erythritol if you prefer)

  • 60g thick dairy-free yogurt (like vegan skyr or Greek-style soy)

  • 3 generous tbsp LoveRaw Pistachio spread (plus extra for the topping!)

  • 160g oat flour

  • Pinch of sea salt

  • 50g dairy-free white chocolate drops

  • Small handful of crushed pistachios (optional, but highly recommended)

Method

  1. Heat your oven to 180°C and line a large baking tray with parchment paper.

  2. In a large bowl, beat together the softened coconut oil and sugar until smooth and creamy.

  3. Add the dairy-free yogurt and the LoveRaw Pistachio spread, mixing until everything is fully combined.

  4. Sift in the oat flour and a pinch of sea salt, then gently fold the mixture until a soft cookie dough forms.

  5. Chuck in the dairy-free white chocolate drops and fold them through the dough.

  6. Scoop the dough into equal-sized balls, place them onto your lined tray, and press them down slightly (oat flour cookies don't spread as much in the oven, so give them a head start).

  7. Bake for 10-12 minutes until the edges are just starting to turn golden but the centers remain perfectly soft. Let them cool completely on the tray.

  8. Warm a few extra spoonfuls of LoveRaw Pistachio spread in a microwave-safe bowl for ~10 seconds until perfectly pourable.

  9. Drizzle heavily over the cooled cookies, scatter the crushed pistachios on top, and get stuck in.
