Peanut Butter Cup Spider Cookies

Go all out this spooky season with some spider-like bakes, which are masterminded by our friend Ella Man, aka @eatsbyellaa

Ingredients (makes 9 cookies):

  • 1 2/3 cups plain flour around 200g 
  • 2tsp spice mix (1 1/4 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp ginger)
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup (30g) brown/coconut sugar
  • 1/3 cup (65g) caster/cane sugar
  • 1/2 baking powder
  • 1/2 baking soda
  • 1/4 tsp salt
  • flax egg/vegan egg replacer
  • 1/3 cup (70g) softened vegan butter
  • 3 tbsp/65g runny nut butter 
  • 1 1/2 tbsp ish plant milk
  • 1 tsp vanilla 
  • 6 LoveRaw M:lk Peanut Butter Cups
  • 30g Smooth Choc M:lk Choc Bar
  • Googly eyes or icing sugar with food dye

Method:

  1. Preheat oven to 185c and line 2 baking trays
  2. Whisk nut butter, butter, vanilla, sugars and egg until smooth
  3. Add all dry ingredients then add milk last (may need 1/2 tbsp more)
  4. Roll into 55-60g balls and flatten into roughly 1cm thick discs
  5. Bake 11-12 mins until golden 
  6. Once relatively cool, add LoveRaw M:lk Peanut Butter Cups on top
  7. Melt the LoveRaw M:lk Choc Bar with 1/2 tsp coconut oil and add to piping bag or plastic bag with a small cut at the bottom
  8. Squeeze chocolate out to draw 8 legs on each cookie, and ‘glue’ on eyes
