Peanut Caramel Bar Cookies

For this year's World Baking Day, we've teamed up with @hummusatheart to bring you chocolate chips cookies topped with peanut butter and our brand new Peanut Caramel Bars. Enjoy!

Recipe makes a big batch! Half for not so many

INGREDIENTS 

- 170 grams vegan butter, softened

- 300 grams light brown sugar

- 44g granulated sugar

- 90 ml plant-based milk

- 3 tsp vanilla extract

- 360 grams plain flour

- 1.5 tsp baking soda

- ½ tsp salt

- 180g vegan chocolate chips

TOPPINGS

- peanuts

- Peanut butter

- LoveRaw Peanut Caramel Bars

- Melted chocolate for drizzling

Instructions

  1. Cream butter and sugar in a bowl. Don’t over beat.
  2. Add vanilla extract and milk. Mix until combined
  3. Add flour, salt and baking powder. Mix until dough forms with no dry patches
  4. Add in your chocolate chips/chunks and mix until evenly distributed
  5. Cover bowl and pop in fridge for half an hour
  6. Preheat oven to 160 (fan) and line baking trays with baking paper
  7. Remove dough from fridge
  8. Separate the dough into tbsp sized balls and place on a baking tray. Ensure dough balls are nicely spread out
  9. Bake for 9 minutes until the edges are just about going golden. They may look undercooked when you remove them from the oven but leave to cool on a baking tray for 5mins before moving to the cooling rack and they’ll firm up nicely!
  10. Finish with peanuts, peanut butter, melted chocolate and of course LoveRaw Peanut Caramel Bars!
