Vegan Pumpkin Mac n' 'Cheese'
The perfect comfort food for Autumn!
Ingredients:
2/3 cup steamed pumpkin
1 x TBS olive oil
1/4 cup soaked cashews (soak in boiled water for about an hour)
1 x TBS nutritional yeast
1 x tsp mustard
1/2 x tsp turmeric
Juice of 1/2 lemon
Salt & pepper to taste
Instructions:
Add all of the ingredients into a blender and blend until smooth and pour over cooked pasta of choice. Garnish with extra cracked black pepper & pumpkin seeds.
