If you're searching for a super simple #Veganuary cookie recipe, you've come to the right place! These beauts are perfectly crunchy on the outside, whilst being melt-in-your-mouth soft on the inside. Drizzle them with melted M:lk Chocolate for ultimate indulgence.
1/2 cup almond butter
1/2 cup coconut sugar
1/2 cup all purpose flour or spelt flour
1/2 tsp baking powder
A splash of oat milk (more or less 3 TBSP)
1 x Just Chocolate M:lk Choc Bar
Cream together the almond butter and sugar before adding in the rest of the ingredients. The dough is quite solid, so get in there with your hands :) Once completely combined, roll the cookie dough into equally sized balls onto a lined baking tray. Using a fork gently press down each ball vertically and horizontally, creating a cookie that’s about 1cm thick. Bake for 12-15 minutes at 175°C until golden. Allow to cool completely before drizzling with some melted M:lk Chocolate and some coarse sea flat flakes. Makes about 6 cookies.
