Crispy, chewy, and filled with melted salted caramel chocolate chunks, these cookies are an absolute winner!
1 x cup almond flour
1/4 cup coconut sugar
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/4 cup maple syrup
1/2 cup tahini
1 x TBS ground flax seeds + 3 x TBS water
2 x LoveRaw Salted Caramel M:lk Choc Bars (chopped into chunks)
Mix the ground flax seed and water together and allow to sit for 5-10 minutes. Mix together all the dry ingredients followed by the wet ingredients, adding the chopped up chunks of the Salted Caramel M:lk Chocolate right at the end. Once everything is combined scoop cookie dough onto a parchment paper lined tray, spacing them out generously as they will spread. Bake for 10-12 minutes until golden at 175°C. Allow to cool completely as they will be soft coming out of the oven. Makes about 6 giant cookies or 12 small cookies.
