Vegan Vanilla & Chocolate Donuts
Who says making doughnuts needs to be hard? Take it one step further… Who says making vegan doughnuts needs to be hard either?
No frying involved either; these vegan vanilla & chocolate doughnuts are light and fluffy… and as if they couldn’t get any better - they’re topped with our creamy LoveRaw Peanut Butter Cups!
Recipe: Makes 6 vegan chocolate donuts.
Donut Ingredients:
- 1 x cup GF flour blend
- 2 x TBS almond flour
- 2 x TBS coconut sugar
- 1 x tsp baking powder
- 1/2 x tsp baking soda
- 1/2 x tsp cinnamon
- Generous dash of salt
- 1/2 x tsp lemon juice
- 1/2 x cup oat milk
- 1/4 x cup maple syrup
- 2 x TBS coconut oil
- 1 x tsp vanilla extract
Frosting Ingredients:
- 40g dark chocolate
- 1/4 cup coconut cream
- 2 x LoveRaw M:lk or White Choc Peanut Butter Cups
Instructions:
For the donuts
- Grease your donut tin with coconut oil.
- Start by adding the lemon juice to the oat milk and let it sit for five minutes.
- Then in a separate bowl mix together the melted coconut oil and coconut sugar, followed by the oat milk and lemon juice along with the rest of the wet ingredients (maple syrup & vanilla).
- Then go ahead and add in the rest of the dry ingredients (GF flour, almond flour, baking soda, baking powder).
- Then spoon your mixture into the donut moulds and bake for 8-10 minutes at 180°C until golden.
For the frosting
- In a bain-marie, melt the dark chocolate with the coconut cream and refrigerate until slightly stiff.
- Add a splash of plant milk if you need to soften it slightly.
- Once your donuts are cooled, spread a thick layer of the frosting over the top and decorate with chopped up Butter Cups.
