Vegan Vanilla & Chocolate Donuts

Who says making doughnuts needs to be hard? Take it one step further… Who says making vegan doughnuts needs to be hard either?

No frying involved either; these vegan vanilla & chocolate doughnuts are light and fluffy… and as if they couldn’t get any better - they’re topped with our creamy LoveRaw Peanut Butter Cups!

Recipe: Makes 6 vegan chocolate donuts.

Donut Ingredients:

  • 1 x cup GF flour blend 
  • 2 x TBS almond flour 
  • 2 x TBS coconut sugar 
  • 1 x tsp baking powder 
  • 1/2 x tsp baking soda 
  • 1/2 x tsp cinnamon 
  • Generous dash of salt 
  • 1/2 x tsp lemon juice 
  • 1/2 x cup oat milk 
  • 1/4 x cup maple syrup 
  • 2 x TBS coconut oil 
  • 1 x tsp vanilla extract 

Frosting Ingredients: 

Instructions:

For the donuts

  1. Grease your donut tin with coconut oil.
  2. Start by adding the lemon juice to the oat milk and let it sit for five minutes.
  3. Then in a separate bowl mix together the melted coconut oil and coconut sugar, followed by the oat milk and lemon juice along with the rest of the wet ingredients (maple syrup & vanilla).
  4. Then go ahead and add in the rest of the dry ingredients (GF flour, almond flour, baking soda, baking powder).
  5. Then spoon your mixture into the donut moulds and bake for 8-10 minutes at 180°C until golden. 

For the frosting

  1. In a bain-marie, melt the dark chocolate with the coconut cream and refrigerate until slightly stiff.
  2. Add a splash of plant milk if you need to soften it slightly.
  3. Once your donuts are cooled, spread a thick layer of the frosting over the top and decorate with chopped up Butter Cups.
